Abstract
본 발명은 쿡-인(cook-in) 포장에 적합한 박리가능한 적층물 및 식품 조리 방법을 제공한다.
본 방법은 하기 단계들을 포함한다: a) (1) 식품과 접촉하고 있는 식용 필름, 및 (2) 식용 필름에 박리가능하게 부착되어 있는 보호 필름을 갖는 박리가능한 적층물에, 식품을 봉입하는 단계; 및 b) 봉입된 식품을 가열하여 적어도 부분적으로 조리하고, 보호 필름을 식용 필름으로부터 박리시키는데 필요한 힘보다 큰 접착 강도를 사용하여, 상기 적어도 부분적으로 조리된 식품에, 식용 층을 부착시키는 단계.
본 방법에 의해, 식품 입자가 필름에 부착함으로써 생기는 생성물의 손실 없이도, 조리후 식용 필름으로부터 보호 필름을 박리시킬 수 있다. 더욱이, 박리가능한 적층물에 의해 쿡-아웃(cook-out)을 방지하거나 최소화할 수 있고 조리과정중 식용 필름을 통해 변성제를 식품에 운반시킬 수 있다.

Claims (23)
- a) (1) 식품과 접촉하고 있는 식용 필름, 및 (2) 식용 필름에 박리가능하게 부착되어 있는 보호 필름을 갖는 박리가능한 적층물에, 식품을 봉입하는 단계; 및 b) 봉입된 식품을 가열하여 적어도 부분적으로 조리하고, 보호 필름을 식용 필름으로부터 박리시키는데 필요한 힘보다 큰 접착 강도를 사용하여, 상기 적어도 부분적으로 조리된 식품에, 식용 층을 부착시키는 단계를 포함함을 특징으로 하는 식품 조리 방법.
- 제1항에 있어서, 보호 필름을 식용 필름으로부터 박리시키는 단계를 추가로 포함하고, 이때 식품은 식용 필름내에 실질적으로 봉입된 채로 잔존하는 방법.
- 제1항에 있어서, 식용 필름이 단백질, 탄수화물, 유기 산, 폴리에테르, 비닐 알콜 및 이들 물질의 혼합물로 구성된 군에서 선택된 물질을 포함하는 방법.
- 제1항에 있어서, 식용 필름이 변성제를 함유하고, 가열 단계중 적어도 일부의 변성제를 식품에 운반함을 추가로 포함하는 방법.

- 제8항에 있어서, 보호 필름이 제1층과 제2층 사이에 위치한 내층을 추가로 포함하고, 내층이 에틸렌/비닐 아세테이트 공중합체, 에틸렌/아크릴레이트 공중합체, 저밀도 폴리에틸렌, 에틸렌/-올레핀 공중합체, 폴리아미드, 식용 물질, 폴리우레탄 및 이들 물질의 혼합물로 구성된 군에서 선택된 물질로부터 형성되는 방법.
- 제9항에 있어서, 보호 필름이 제1층과 제2층 사이에 위치한 또하나의 내층을 추가로 포함하고, 또하나의 내층이 에틸렌/비닐 알콜, 비닐리덴 클로라이드 공중합체, 폴리아미드, 폴리비닐 알콜, 폴리하이드록시아미노에테르 및 이들 물질의 혼합물로 구성된 군에서 선택된 물질로부터 형성되는 방법.
- 제1항의 방법에 의해 생성된 조리 포장된 식품.
- a) (1) 변성제를 내포하고 있으며, 식품과 접촉하고 있는 식용 필름, 및 (2) 식용 필름에 박리가능하게 부착되어 있는 보호 필름을 갖는 박리가능한 적층물에, 식품을 봉입하는 단계; 및 b) 봉입된 식품을 가열하여 변성제의 적어도 일부를 식품에 운반하고 식품을 적어도 부분적으로 조리하고, 보호 필름을 식용 필름으로부터 박리시키는데 필용한 힘보다 큰 접착 강도를 사용하여, 상기 적어도 부분적으로 조리된 식품에 식용 층을 부착시키는 단계를 포함함을 특징으로 하는, 조리하고 변성제를 식품에 운반하는 방법.
- 제12항에 있어서, 보호 필름을 식용 필름으로부터 박리시키는 단계를 추가로 포함하고, 이때 식품은 식용 필름내에 실질적으로 봉입된 채로 잔존하는 방법.
- 제12항에 있어서, 식용 필름이 단백질, 탄수화물, 유기 산, 폴리에테르, 비닐 알콜 및 이들 물질의 혼합물로 구성된 군에서 선택된 물질을 포함하는 방법.

- 제19항에 있어서, 보호 필름이 제1층과 제2층 사이에 위치한 내층을 추가로 포함하고, 내층이 에틸렌/비닐 아세테이트 공중합체, 에틸렌/아크릴레이트 공중합체, 저밀도 폴리에틸렌, 에틸렌/-올레핀 공중합체, 폴리아미드, 식용 물질, 폴리우레탄 및 이들 물질의 혼합물로 구성된 군에서 선택된 물질로부터 형성되는 적층물.
- 제20항에 있어서, 보호 필름이 제1층과 제2층 사이에 위치한 또하나의 내층을 추가로 포함하고, 또하나의 내층이 에틸렌/비닐 알콜, 비닐리덴 클로라이드 공중합체, 폴리아미드, 폴리비닐 알콜, 폴리하이드록시아미노에테르 및 이들 물질의 혼합물로 구성된 군에서 선택된 물질로부터 형성되는 적층물.
