Abstract
에스테르기가 (1) 다른 지방산 또는 다른 유기산 라디칼로 에스테르화된 하나 이상의 하이드록실기를 갖는 지방산 라디칼 및, (2) 장쇄(C20)이상 포화 지방산 라디칼 약 15%이상으로 필수적으로 이루어진 고체 비소화성 폴리올 폴리에스테르, (1):(2)의 몰비는 약 0.1:7.9 내지 약 3:5이다. 이들 고체 비소화성 폴리올 폴리에스테르는 액체 비소화성 오일에 대한 매우 효율적인 수동적인 오일 손실 억제제이다. 이들 고체 폴리올 폴리에스테르를 함유하는 비소화성 지방을 포함하는 식용 지방-함유 제품은 수동적인 오일 손실을 억제하는데 필요한 고체의 양이 소량이기 때문에 덜 기름진 맛을 낼 수 있다.

제1도는 액체 슈크로오스 폴리에스테르 분산된, 지방산-지방산 라디칼로부터 형성된 에스테르기를 함유하는 고체 폴리올 폴리에스테르의 입자를 나타내는 현미경사진(배율 1,000×)이다.
Claims (8)
- (a) 4개 이상의 에스테르화된 하이드록실기를 함유하는 폴리올 잔기;및 (b) (i) C20이상의 포화 지방산 라디칼 15% 이상, 및 (ii) 지방산 라디칼로 에스테르화된 하이드록실기를 함유하는 지방산 라디칼을 포함하는 지방산-지방산 라디칼로 필수적으로 이루어진 에스테르기를 포함하며, 이 때 상기 지방산-지방산 라디칼 대 상기 C20이상의 포화 지방산 라디칼의 평균 몰비가 0.1:7.9 내지 3:5, 바람직하게는 1:7 내지 1.5:6.5인 것을 특징으로 하는, 25℃보다 높은 완전 융점을 갖는 비소화성 폴리올 지방산 폴리에스테르.
- 제1항에 있어서, 폴리올의 잔기가 4 내지 8개, 바람직하게는 8개의 하이드록실기를 갖고;지방산-지방산 라디칼이 하나 이상의 하이드록실기를 갖는 탄소원자 12 내지 22개의 지방산 라디칼, 바람직하게는 리시놀레산 및 상기 하나 이상의 하이드록실기 상으로 에스테르화된 탄소원자 12 내지 22개의 지방산 라디칼 하나 이상을 포함하며;장쇄 포화 지방산 라디칼이 20 내지 26, 바람직하게는 22개의 탄소원자를 함유하는 것을 특징으로 하는 비소화성 폴리올 폴리에스테르.
- A. 37℃ 미만의 완전 융점을 갖는 액체 비소화성 오일;및 B. 조성물의 섭취시 수동적인 오일 손실을 억제하기에 충분한 양으로 상기 오일중에 분산되고, 약 37℃보다 높은 완전 융점을 갖는 폴리올 폴리에스테르의 비소화성 고체 입자를 포함하고, 또한 21.1℃와 37℃사이에서 0 내지 -1.26%고체/℃의 고체 지방 함량 프로파일 기울기를 가지며, 이 때 상기 비소화성 고체 입자를 형성하는 폴리에스테르 물질이 (a) 4개 이상의 에스테르화된 하이드록실기를 함유하는 폴리올 잔기;및 (b) (i) C20이상의 포화 지방산 라디칼 15% 이상, (ii) 지방산 라디칼로 에스테르화된 하이드록실기를 함유하는 지방산 라디칼을 포함하는 지방산-지방산 라디칼로 필수적으로 이루어진 에스테르기를 포함하며, 이 때 상기 지방산-지방산 라디칼 대 상기 C20이상의 포화 지방산 라디칼의 평균 몰비가 0.1:7.9 내지 3:5, 바람직하게는 1:7 내지 1.5:6.5인 것을 특징으로 하는, 식품에서 트리글리세라이드 지방 또는 오일의 대용물로서 유용한 비소화성 지방 조성물.
- 제3항에 있어서, 고체 폴리올 폴릴에스테르 물질이 4 내지 8, 바람직하게는 8개의 하이드록실기를 갖는 폴리올 잔기;하나 이상의 하이드록실기를 함유하는 탄소원자 12 내지 22개의 지방산 라디칼, 바람직하게는 리시놀레산, 및 상기 하나 이상이 하이드록실기상으로 에스테르화된 탄소원자 12 내지 22개의 지방산 라디칼 하나 이상을 포함하는 지방산-지방산 라디칼;및 20 내지 26개, 바람직하게는 22개의 탄소원자를 함유하는 장쇄 포화 지방산 라디칼을 포함하는 것을 특징으로 하는 비소화성 지방 조성물.
- 제4항에 있어서, 60% 내지 99%, 바람직하게는 85% 내지 약 99%의 액체 비소화성 오일 및 1% 내지 40%, 바람직하게는 약 1% 내지 약 15%의 고체 폴리올 폴리에스테르 입자를 포함하는 비소화성 지방 조성물.
- 제5항에 있어서, 비소화성 고체 슈크로오스 지방산 폴리에스테르 입자가 1마이크론 미만의 두께를 갖는 비소화성 지방 조성물.
- A. 약 25℃ 미만의 완전 융점을 갖는 소화성 식용 오일 85% 내지 99%;및 B. 37℃보다 높은 완전 융점을 갖는 고체 비소화성 폴리올 폴리에스테르 입자 1% 내지 15%를 포함하며, 이 때 상기 비소화성 입자를 형성하는 폴리올 폴리에스테르 물질이 (a) 4개 이상의 에스테르화된 하이드록실기를 함유하는 폴리올 잔기;및 (b) (i) C20이상의 포화 지방산 라디칼 15% 이상, (ii) 지방산 라디칼로 에스테르화된 하이드록실기를 함유하는 지방산 라디칼을 포함하는 지방산-지방산 라디칼로 필수적으로 이루어진 에스테르기를 포함하며, 이 때 상기 지방산-지방산 라디칼 대 상기 C20이상의 포화 지방산 라디칼의 평균 몰비가 0.1:7.9 내지 3:5, 바람직하게는 1:7 내지 1.5:6.5인 것을 특징으로 하는, 점도가 증가된 소화성 오일 제품.
- 제7항에 있어서, 소화성 오일이 트리글리세라이드이고, 고체 폴리올 폴리에스테르 입자 물질이 4 내지 8개, 바람직하게는 8개의 하이드록실기를 갖는 폴리올 잔기;하나 이상의 하이드록실기를 함유하는 탄소원자 12 내지 22개의 지방산 라디칼, 바람직하게는 리시놀레산 및 상기 하나 이상이 하이드록실기상으로 에스테르화된 탄소원자 12 내지 22개의 지방산 라디칼 하나 이상을 포함하는 지방산-지방산 라디칼;및 20 내지 26개, 바람직하게는 22개의 탄소원자를 함유하는 장쇄 포화 지방산 라디칼을 포함하는 지방 조성물.※ 참고사항:최초출원 내용에 의하여 공개하는 것임.
