Abstract

본 발명은 미생물에 의한 홍국색소의 제조방법에 관한 것으로서, 더욱 상세하게는 홍국균의 일종인 모나스커스(Monascus)속의 균들을 이용하여 홍국색소를 제조하는 방법에 관한 것이다.

Claims (1)

  1. 홍국균을 탄소원과 질소원이 함유되어 있는 배지상에 접종 배양시켜서 홍국색소를 제조함에 있어서, 전체 배지조성중에 상기 탄소원으로서 쌀가루 5~11 중량%와 질소원으로서 펩톤 0.1~1.0 중량%가 함유되어 있는 색소생산용 배지를 사용하여 홍국색소를 제조하는 것을 특징으로 하는 홍국색소의 제조방법.
