Claims (1)
- 탈지대두박, 소맥글루텐, 옥수 수글루텐등이 단백질을 분해하여 조미액을 제조함에 있어 단백질분해 효소로 부분적 효소분해를 행한후 황산, 염산등을 사용하여 완전 산가수분해하는 방법. 1-1, 제1항에 있어 단백질분해효소를 첨가하기전에 단백질원을 90-100℃의 열수로 1-2시간 침지후 회전종자관에서 단백질원을 변성시켜 단백질분해효소 50-100mg, 글루타미나제 0.3-0.7g온도 30-40℃, pH4.5-9.0으로 유지하여 단백질분해효소를 첨가하여 1일 경과후 산가수분해하는 것을 특징으로 함.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
