Claims (1)

  1. 원료대두를 공지의 방법으로 석발제거, 수세, 침수, 증숙, 맥분과의 버무림, 황곡균의 배합 및 숙성, 발효등의 공정을 거치되 원료대두에 대하여 염화나트륨 약 0.7∼1.0중량%를 대두의 증숙전 또는 그 이후의 공정에서 배합하고, 역시 원료대두에 대하여 맥아분 약 0.5용적%를 맥분과의 버무림시나 황곡균 배합시에 혼합 교반하여 발효시킴을 특징으로 한 개량메주의 제조방법.
