Claims (1)
- 본문에서 상술한바와 같이 우유를 유기산으로 처리하여 우유단백질을 응고시키는 방법에 있어서 우유를 가온한후 초산을 첨가하여 pH3.5-4.0로 조절 응고시킨후 Mgcl2ㆍCacl2등을 택일하여 잔혀 단백질을 응고시킨 다음 8-10시간 재우기를 하여서 됨을 특징으로 하는 유부 제조방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
