Claims (5)
- 원료 마늘을 분쇄하여 마늘 분쇄물을 생성하는 단계;
상기 마늘 분쇄물에 상기 원료 마늘의 1/N 중량%의 꿀을 첨가하여 혼합하여 혼합물을 생성하는 단계로서, 상기 N은 3 내지 7인 자연수인, 상기 혼합물 생성 단계;
상기 혼합물을 고온에서 숙성하는 단계;
상기 숙성된 혼합물을 저온에서 발효하는 단계;
상기 발효된 발효물을 상기 혼합물 생성 단계, 상기 고온 숙성 단계, 및 상기 저온 발효 단계를 N 회 거치도록 반복하는 단계를 포함하는 마늘 추출물 제조 방법. - 제 1 항에 있어서,
상기 고온 숙성 단계에서 고온 숙성 기간은 2일 내지 4일인 것을 특징으로 하는, 마늘 추출물 제조 방법. - 제 2 항에 있어서,
상기 저온 발효 단계에서 저온 발효 기간은 상기 고온 숙성 기간의 1/3인 것을 특징으로 하는, 마늘 추출물 제조 방법. - 제 1 항에 있어서,
상기 고온 숙성 단계에서 고온 숙성 온도는 60 내지 70℃인 것을 특징으로 하는, 마늘 추출물 제조 방법. - 제 1 항에 있어서,
상기 저온 발효 단계에서 저온 발효 온도는 30 내지 40℃인 것을 특징으로 하는, 마늘 추출물 제조 방법.
