Claims (4)
- (a) 구판 분말에 물을 첨가하여 침지하는 단계;
(b) 상기 (a)단계의 구판 분말 침지물을 건조한 후 분쇄하여 구판분말을 제조하는 단계;
(c) 상기 (b)단계의 구판 분말을 가온하는 단계;
(d) 상기 (c)단계의 가온한 구판분말에 단백질 분해효소를 첨가하여 1차 효소 반응하고, 케라틴 분해효소를 첨가하여 2차 효소 반응하는 단계;
(e) 상기 (d)단계의 2차 효소 반응물에 황국균(Aspergillus oryzae), 효모(yeast) 및 바실러스 서브틸리스(Bacillus subtilis)의 혼합균주를 접종한 후 고상 발효하는 단계; 및
(f) 상기 (e)단계의 고상 발효물을 열수 추출한 열수 추출물을 농축 및 건조하는 단계를 포함하여 제조하는 것을 특징으로 하는 고상 발효 구판 발효물의 제조방법. - 제1항에 있어서,
(a) 구판 분말에 물을 첨가하여 7~9시간 동안 침지하는 단계;
(b) 상기 (a)단계의 구판 분말 침지물을 건조한 후 180~200 메쉬(mesh) 입자 크기로 분쇄하여 구판 분말을 제조하는 단계;
(c) 상기 (b)단계의 구판 분말을 수분함량 35~45%, 55~65℃의 반응기에서 2~4시간 동안 가온하는 단계;
(d) 상기 (c)단계의 가온한 구판분말에 단백질 분해효소를 첨가하여 50~60℃에서 45~50시간 동안 1차 효소 반응하고, 케라틴분해효소를 첨가하여 50~60℃에서 45~50시간 동안 2차 효소 반응하는 단계;
(e) 상기 (d)단계의 2차 효소 반응물에 황국균(Aspergillus oryzae), 효모(yeast) 및 바실러스 서브틸리스(Bacillus subtilis)의 혼합균주를 접종한 후 55~65℃에서 42~54시간 동안 고상 발효하는 단계; 및
(f) 상기 (e)단계의 고상 발효물을 열수 추출한 열수 추출물을 농축 및 건조하는 단계를 포함하여 제조하는 것을 특징으로 하는 고상 발효 구판 발효물의 제조방법. - 제1항 또는 제2항의 방법으로 제조된 고상 발효 구판 발효물.
- 제3항의 고상 발효 구판 발효물을 이용한 가공식품.
