Description
이때, 밑술 제조에 사용되는 맥즙은 하기 2) 단계의 맥즙 제조 단계에 기재된 방법과 동일한 방법으로 제조된다. 이와 같이 밑술에 사용하기 위한 맥즙을 제조한 다음, 다시 연맥주에 사용하기 위한 별도의 맥즙을 제조하는 이유는 한꺼번에 맥즙을 제조하여 준비해 둘 경우 시간의 경과에 따라 미리 제조해 둔 맥즙이 변성하기 때문이다.
이때, 본 발명에서 사용하는 '백련잎차'는 '연잎 100%'로 구성된 것이고, '연화차'는 '연잎 약 88%와 연꽃 약 12%'로 구성된 것으로서, 물을 넣어 추출하기 이전 상태의 재료들을 의미한다.
