Claims (9)
- (a) 생선을 손질하고 생선 토막을 준비하는 단계;(b) 상기 생선의 피부와 가까운 상기 생선의 한쪽 측면을 따라 뻗어 있는 혈맥(5)을 따라, 상기 생선 토막이 실질적으로 V자 형태를 가지도록 얇게 절단(6)하여 상기 생선 토막에서 상기 혈맥(5)을 제거하는 단계;(c) 상기 (b) 단계 이후, 상기 생선 토막을 살균처리하고 포장물에 포장하는 단계;(d) 상기 (c) 단계 이후, 상기 포장물을 진공 처리하고, 후속하여 대기압의 80% 내지 95% 범위의 진공 압력에 도달할 때까지 불순물이 섞이지 않은 산소를 상기 포장물에 채우는 단계;(e) 상기 (d) 단계 이후, -60℃ 내지-70℃ 온도 범위의 초저온 환경에서 상기 진공 처리된 포장물을 급속 냉동하는 단계; 및(f) 상기 진공 포장물을 -60℃ 내지 -70℃ 온도에서 냉동시킨 후 -20℃ 내지 -60℃ 온도 범위의 냉동환경에 저장하는 단계를 포함하는 생선 보관 방법.
