Description
本発明は、また、解凍中において真空包装を開放しなくても、魚類の血液内に含有しているヘモグロビンとプロテインが酸素との結合状態に戻れ、元々の外観、鮮度に回復することができる魚類保存方法を提供することをその目的とする。
前記包装の後、更に前記包装した魚類を−60℃〜−70℃の超低温範囲まで急速に凍結することが好ましい。
前記酸素含有ガスは二酸化炭素と酸素と窒素とからなるもの、あるいは通常の空気を使用することが好ましい。

Claims (1)
- 魚類に対し、菌類による分解作用を抑制する鮮度保持処理を行ってから、その魚類を80%〜95%の真空状態の二酸化炭素、酸素及び窒素含有ガスの雰囲気下で真空バッグで包装した後、包装した魚類を−60℃〜−70℃の超低温範囲まで急速に凍結して冷凍し、凍結した魚類を−20℃〜−60℃の温度範囲に保持して貯蔵することを特徴とする魚類保存方法。
