Claims (11)
- 화학식 R1-S-R2로 표시되는 1종 이상의 화합물의 유효량을 식품에 혼입시키는 것을 포함하는 식품을 조미(flavouring)하는 방법으로서, 상기 식에서 R1 및 R2는A. 메틸기 및 2-메틸-2-부텐-1-일기;B. 에틸기 및 포르밀기;C. 에틸기 및 1-(3-아자-1,4-디옥소-펜틸)기;D. 메틸기 및 1-(3-아자-4-옥소-펜틸)기;E. 수소 원자 및 1-(1-프로필옥시카르보닐)에틸기;F. 이소프로필기 및 2-펜틸기;G. 수소 원자 및 2-이소프로페닐기에서 선택되는 원자 또는 기의 조합을 나타내거나; 또는H. R1 및 R2는 함께 1-옥소-3-메틸-2-아자부트-3-엔-1,4-디일기 또는 이의 호변이성체 구조를 나타내거나; 또는I. R1 및 R2는 함께 1,2-디메틸-3-포르밀-1,3-부타디엔-1,4-디일기를 나타내는 것인 방법.
- 제1항에 있어서, R1 및 R2가A. 메틸기 및 2-메틸-2-부텐-1-일기;B. 에틸기 및 포르밀기;C. 에틸기 및 1-(3-아자-1,4-디옥소-펜틸)기;D. 메틸기 및 1-(3-아자-4-옥소-펜틸)기;E. 수소 원자 및 1-(1-프로필옥시카르보닐)-에틸기;F. 이소프로필기 및 2-펜틸기;H. 수소 원자 및 2-이소프로페닐기에서 선택되는 원자 또는 기의 조합을 나타내는 1종 이상의 화합물을 혼입시키는 것인 방법.
- 제1항 또는 제2항에 있어서, R1 및 R2가 메틸기 및 1-(3-아자-4-옥소-펜틸)기를 나타내는 1종 이상의 화합물을 혼입시키는 것인 방법.
- 제1항 또는 제2항에 있어서, R1 및 R2가 수소 원자 및 2-프로필렌프로피오네이트기를 나타내는 1종 이상의 화합물을 혼입시키는 것인 방법.
- 제3항에 있어서, R1 및 R2가 메틸기 및 1-(3-아자-4-옥소-펜틸)기를 나타내는 화합물을 2-메틸-푸란-3-티올이나 이의 유도체 또는 전구체와 배합하는 것인 방법.
- 제1항 또는 제2항에 있어서, 화학식 R1-S-R2로 표시되는 1종 이상의 화합물을 메탄디티올이나 이의 유도체 또는 전구체와 배합하는 것인 방법.
- 제1항에 있어서, R1 및 R2는 함께A. 1-옥소-3-메틸-2-아자부트-3-엔-1,4-디일기 또는 이의 호변이성체 구조; 또는B. 1,2-디메틸-3-포르밀-1,3-부타디엔-1,4-디일기중 하나를 나타내는 것인 1종 이상의 화합물을 혼입시키는 방법.
- 제1항의 A∼I에서 정의된 바와 같은 화학식 R1-S-R2로 표시되는 1종 이상의 화합물을 포함하는 조미 농축물.
- 제1항의 A∼I에서 정의된 바와 같은 화학식 R1-S-R2로 표시되는 1종 이상의 화합물을 포함하는 조미된 식품.
- 제8항에 있어서, 메탄디티올, 2-메틸-푸란-3-티올, 이의 혼합물 또는 이의 유도체 또는 전구체를 더 포함하는 조미 농축물.
- 제9항에 있어서, 메탄디티올, 2-메틸-푸란-3-티올, 이의 혼합물 또는 이의 유도체 또는 전구체를 더 포함하는 조미된 식품.
