Claims (3)
- 두부를 제조하는 방법에 있어서,콩을 물에 불린 후 갈아서 만든 콩물을 끓인 후 식히고 콩물 400~500g 당 클로렐라 분말을 1~2g을 첨가하면서 응고제를 넣어 두부를 제조하는 단계와,상기 제조된 두부의 형태를 유지하고 영양분 파괴를 방지하기 위하여 -40 ~ -50℃로 급속으로 동결 건조하는 단계; 및상기 동결된 두부의 재질을 부드럽게 하기 위하여 35~40℃로 서서히 열건조하는 단계를 포함하여 이루어지는 것을 특징으로 하는 클로렐라 첨가 동결건조 두부 제조방법.
