Abstract

PURPOSE: A method of growing functional Flammulina velutipes using a culture medium composition containing red ginseng extract and herbal extract. It grows the mushroom at low temperature for a long period of time(70 days) and thus produces functional Flammulina velutipes having excellent chewy texture and chewable taste. CONSTITUTION: In growing Flammulina velutipes with a culture medium composition, 0.2% by weight of red ginseng by-products, 0.2% by weight of ginseng or herbal plant by-product, 82% by weight of sawdust and 17% by weight of rice bran are mixed. Then, it is added with 0.6% by weight of water to adjust the moisture content to 63 to 65%. In the stage for manufacturing sawdust, sawdust with a size of about 2mm is mixed with sawdust with a size of 2mm or less in a ratio of 7:3. In the step for sterilization, it is allowed to settle at 100deg.C for 60min, sterilized at 118deg.C for 90min and then cooled to 100deg.C after being allowed to settle for 90min.
