Claims (3)
- 유화제, 물, 당알콜 및 당류, 그리고 알콜이 함유되는 케익용 기포제에 있어서,상기 유화제는 글리세린지방산에스테르(A 성분), 프로필렌글리콜지방산에스테르, 솔비탄지방산에스테르 및 레시틴 중에서 선택된 2종 이상의 혼합물(B 성분), 그리고 자당지방산에스테르(C 성분)로 구성되고, 상기 유화제로 포함되는 A 성분 : B 성분 : C 성분의 중량비가 1 : 0.3 ∼ 0.5 : 0.5 ∼ 0.8 범위를 이루고 있고, 상기 유화제 총 사용량은 전체 기포제 조성물에 대하여 6 ∼ 13 중량% 범위인 것임을 특징으로 하는 케익용 기포제.
- 제 1 항에 있어서, 상기 당알콜 및 당류는 전체 기포제 조성물 중에 10 ∼ 20 중량%가 함유되는 것임을 특징으로 하는 케익용 기포제.
- 제 1 항에 있어서, 상기 알콜은 프로필렌글리콜, 글리세린 및 에틸알콜 중에서 1종 이상 선택된 것이고, 전체 기포제 조성물 중에 7 ∼ 15 중량%가 함유되는 것임을 특징으로 하는 케익용 기포제.
