Abstract

PURPOSE:To produce an oil and fat composition capable of being rapidly kneaded into bread dough and effective in softening bread and improving the palatability of bread, by compounding a specific natural gum agent and a glycerol fatty acid ester to an oil and fat composition. CONSTITUTION:(A) A natural gum agent selected from karaya gum, tragacanth gum and pectin and (B) a glycerol fatty acid ester are dissolved or dispersed in hot molten edible oil and fat. The weight ratio of A:B is about 1:(0.1-10) and the sum of the components A and B is about 1-10wt.% based on the oil and fat composition. The obtained only phase is mixed and emulsified with an aqueous phase at a ratio to get an oily phase content of 50-90wt.% based on the whole system and the emulsion is plasticized by quenching by conventional method.
