Abstract
PURPOSE: To provide a low-cost emulsifier composition having excellent emulsifiability, and useful for the production of various processed foods such as meat or fish ham, sausage, fish paste, etc., by using wheat gluten and a thickner as main components.
CONSTITUTION: A composition composed of (A) 100 parts by weight of wheat gluten (raw gluten, activated gluten, reduced gluten, etc.) and (B) 10W55 parts by weight of a thickener (guaiac gum, locust bean gum, xanthan gum, carrageenan, etc.). More than 2% of the composition is added to the meat, etc. to be processed.
