Abstract

PURPOSE:To readily obtain a fruit juice beverage of good quality especially from fruits hard to extract juice at a low cost, by adding lime to crushed fruits, coagulating the crushed fruits under alkaline condition, separating fruit juice from the coagulated fruits by centrifugation, etc., adding an organic acid to the fruit juice and heat-treating the obtained fruit juice. CONSTITUTION:Crushed fruits are mixed with an adequate amount of lime (e.g. preferably slaked lime or quick lime) and coagulated under alkaline condition and coagulated fruits are then separated to provide fruit juice. An organic acid is subsequently added to the resultant fruit juice and heat-treatment thereof is then carried out.
