Description

【発明の詳細な説明】[Detailed description of the invention]

本発明はアルフアルフア(学名Medicago
Sativa)を原料とする健康茶その製造方法に係
り、特にアルフアルフアが有する高い栄養分を損
わず、かつ、日本人のお茶に対する味覚を満足せ
しめた緑茶と同じ飲料としてそのエキス分を人体
に摂取せしめることを可能としたものである。 一般に海外では牧草として有名なアルフアルフ
ア(Alfal−fa)が高い栄養分を備え、他の植物
に比較すれば極めて有用な植物であることが、植
物学者等の研究により指摘され、以来これを人体
に摂取することができないものかと種々研究が重
ねられている。米国では既にアルフアルフアを乾
燥し、これを煎じて飲用することが行なわれてい
るが、アルフアルフアを単に乾燥しただけでは特
有の臭味が抜けず、煎薬と同様の感覚で常飲すれ
ばとも角、到底日常気軽に飲用できるものではな
い。すなわち、アルフアルフアは古来よりその名
称の示す通り、薬効があることは知られて来たが
(Medicagoとは薬に使われるという意味)、これ
を常食する慣習はなく、それ故に人間が食するに
適する調理方法が確率されていないのが現状であ
る。そこで、生のアルフアルフアを大量に食する
かあるいは前記の如く米国において煎薬の一種と
して使用する以外にアルフアルフアのもつ高い栄
養分を直接に人体に摂取する方法は存しなかつ
た。したがつて、アルフアルフアはその有する高
い栄養価を認識されながらも人間が食することは
なく、単に家畜に最適する牧草として利用される
のみであつた。 ところで近時、アルフアルフアを日本国内で栽
培することに成功した出願人はアルフアルフアを
家畜の飼料となす以外にその高い栄養分を直接的
に人体に摂取すべき方法の研究を重ねて来た。す
なわち、近時所謂健康食品ブームが隆盛し、クコ
茶、ハト麦茶などが出回つており一部では常飲さ
れているようである。そこで出願人はこれらの健
康食品と同様にアルフアルフアをお茶に類した飲
料として常飲すべき方策を研究した。しかし乍ら
アルフアルフアは飲食用として加工する有効な方
法もなく、仮りにアルフアルフアをお茶と同様の
飲料としても前記クコ茶やハト麦茶の如く、特有
の臭味があり、また所謂青臭さは、到底人間が気
軽に飲用することができない要因の一つであつ
た。 そこで、本発明はアルフアルフアを緑茶もしく
は紅茶と同様に気軽に日常飲用できるように加工
して市場に提供することを目的とするもので、こ
の目的を達成するために所定丈に成長したアルフ
アルフアを採取し、細断し、蒸熱処理し、高温並
びに低温において乾燥処理したる後、再び細断
し、更に攪拌しつつ焙煎し、必要により粉砕して
紛末状となすべき健康茶の製造方法を構成したも
のである。かくしてアルフアルフアを加工してお
茶と同様にして飲用すれば特有の臭味特に青臭さ
が抜け、殆んど緑茶に近い飲用食品を得ることが
できるものである。 以下に本発明の構成をその一実施例に基づいて
説明する。 まず第1に30〜40cmの丈高さに成長したアルフ
アルフアを根元から刈り取る。すなわち、アルフ
アルフアの葉のみでなく茎も利用するものであ
る。 ついで第2に刈り取つたアルフアルフアを細断
機にかけ略1cm程度の大きさになる如く丈方向を
分断するものである。これは次の蒸熱処理におい
て万遍なく加熱ができるようにするとともに、最
終的にお茶葉と同様の加工をする為の前準備であ
る。 第3に上記細断したものを温度約120℃の蒸気
で約5秒間加熱する。これは殺菌を行うととも
に、植物を茶色に変色させる物質キサントフイル
等の働きを抑制するためのものである。 第4に上記蒸熱処理したものを空冷して常温に
戻す。これは高温状態が長く続くとその含有する
ビタミン類が消失するのを防止するためである。 第5に常温に冷却されたものを粗揉機にかけ温
度90〜95℃の乾燥空気で約35〜40分間高温乾燥を
する。これは緑茶と同様の乾燥茶葉状とするため
の前工程である。粗揉機は細断されたアルフアル
フアを乾燥すると同時にこれを手揉みの如く揉み
合せる。 第6に粗揉され水分が80%程度除去され略乾燥
したものを更に平乾燥機で温度約37〜40℃の低温
乾燥空気で約8時間乾燥し、その後粗砕機にかけ
て更に細断する。乾燥したアルフアルフアはなお
青臭みがあるが緑茶と同様の状態になり、かつ、
これを細断することにより一層細粒化する。 第7に上記の如く茶葉化したるものを更に厚い
ステンレス製の加熱釜に入れ、アルフアルフアの
温度が50℃となる状態で約10分間焙煎する。ここ
で、アルフアルフアは焙煎されることによりその
青臭みが抜け、緑茶に近い香りを有するに至る。
そこで、この段階を最終製品、すなわちお茶葉と
して用いることができる。 しかしながら、緑茶と同様に上記乾燥加工品を
煎じて飲用とする限りにおいて、アルフアルフア
の栄養分を100%利用できず、茶殻と同様に多量
のアルフアルフアが廃棄されざるを得ない。そこ
で上記乾燥加工品と更に粗砕機にかけて3メツシ
ユの網でこしたのち、更に衝撃式粉砕機にかけ、
約50メツシユ程度の紛末状となし、これを所定量
毎に袋詰めして抹茶の如く利用できるようにする
のが最適である。なお、この紛末状としたるアル
フアルフアは粉薬同様に飲用するも或いは他の食
物に混入して人体に摂取するも任意である。かく
すればアルフアルフアが含有する栄養分は略100
%利用できるものである。 なお、以下にアルフアルフアの一般的成分分析
表及び本発明による健康茶の試験結果を示す。
