Abstract

PURPOSE:To carry out continuously a deoxidation reaction without eluting a deoxidant and to prevent deterioration in quality of refined SAKE(liquor), by preserving SAKE and deoxidant in a closed container. CONSTITUTION:The deoxidant (the top 1 and the bottom 3 consist of a material such as polyethylene, etc., the middle part 2 consists of a material such as microporous film, etc., and the deoxidant 4 is sealed) 6, subjected preferably to blister packing, is packed into the inside of the cap 5 and the bottom is sealed with the microporous film 7, etc., and a container is closed hermetically in such a way that SAKE is not brought into contact with the deoxidant.

DETAILED DESCRIPTION OF THE INVENTION [Field of Industrial Application] The present invention relates to a method for preserving sake. More specifically, the invention relates to a method for preserving sake, characterized in that a blister-packaged oxygen absorber or a double-packaged oxygen absorber is stored together with the sake in a closed container.

In general, sake ages during storage and tends to suffer from quality deterioration such as discoloration and aging. Conventional methods for preventing these quality deteriorations include (1) lowering the storage temperature; (2) Remove dissolved oxygen. As a method (2) for removing dissolved oxygen, attempts have been made to add activated carbon, replace N2 gas, etc.

Generally, iron-based oxygen absorbers are often used, but
When the oxygen absorber and sake come into contact, alcohol and
Moisture transfer caused the oxygen scavenger to become wet, reducing the oxygen scavenging rate or stopping the oxygen scavenging reaction midway through. Furthermore, coloration of the sake due to the reaction between the organic acids in the sake and iron was unavoidable, making it difficult to implement this method on an industrial scale.

The present invention uses an oxygen absorber containing iron powder, ascorbic acid, erythorbic acid, catechol, etc. as its main ingredient in a sealed container together with refined sake, thereby preventing the oxygen absorber from eluting even when it comes into contact with the sake. Oxygen absorber that performs a continuous deoxidizing reaction, can be easily filled into small containers such as bottles and cans, has a good appearance, and does not have the feeling of contamination with foreign matter, and a pre-heating agent using the same. This law concerns methods for preserving raw sake, unprocessed sake, and general sake before shipment.

In order to solve the above-mentioned problems, the present inventors packed the oxygen absorber in a blister made of packaging material as shown in the drawing, and further wrapped the blister in double packaging and placed it in the space inside the airtight container. This led to the completion of the present invention.

Figure 1 shows an oxygen absorber packaged in a blister, with the upper part (1) and lower part (3) made of a packaging material with low air permeability and moisture permeability, and the part in between (2) made of an air-permeable packaging material. These problems could be solved by filling the packed oxygen scavenger into a camp with a hole in the bottom. That is, by inserting an air-permeable packaging material between packaging materials with low air permeability and moisture permeability, oxygen can be removed from the sides of the packaging material, thereby preventing the oxygen absorber from leaching into the alcoholic beverage.

Figure 2 shows that after filling the inside of the cap with this blister, the lower part of the cap is made of microporous film or polyester, nylon, or aluminum with holes.
By sealing with a composite film made of polypropylene laminated with a sealable plastic film such as polyethylene, alcoholic beverages and oxygen scavengers are more completely prevented from coming into contact with each other.

FIG. 3 shows a case in which the oxygen absorber is directly filled into the cap without blister packaging, and the cap is double wrapped. The cap has a double structure, and by sealing the inside and outside with a microporous membrane and providing a space, the contact between the oxygen scavenger and sake is prevented more completely.
