Abstract

PURPOSE: To prepare a product, containing alcohol in a high concentration, and having improved shape retaining properties, by boiling a specific saccharide solution other than thick malt sirup down to a specified moisture content without using the thick malt strup, kneading the boiled down solution with a powdery SAKE, and molding the resultant mixture.
CONSTITUTION: An aqueous saccharide solution consisting of 90W30wt% sugar and 10W70wt% saccharide, e.g. glucose, xylose, fructose, galactose, maltose or lactose, is boiled down to give a boiled down (concentrated) solution with a moisture content of 2W12%. A powdery SAKE is then kneaded with the resultant solution and molded to give a candy containing the SAKE.
