Abstract
PURPOSE: To improve the transparency and prevent excessive sweetness, by adding an ordinary additive for a hard candy to a saccharide component consisting of lactose essentially and maltose in a larger proportion than the lactose and no sucrose.
CONSTITUTION: An ordinary additive for a hard candy is added to a saccharide component conistig of lactose essentially and maltose in a larger proportion than the lactose and no sucrose to suppress the crystallization of the lactose and give a hard candy of low sweetness. Either of α- or β-lactose may be used in an amount of 15W 45pts.wt. calculated as the anhydrous substance per 100pts.wt. the solid contact of the saccharide. Maltose is used in an amount of 30W85pts.wt. calculated as the solid content per 100pts.wt. the total solid content of the saccharide. The weight ratio between the maltose and the lactose is preferably 1.1:1W5.5:1. Organic acids, perfumes, pigments, etc. may be added thereto as well as the saccharide component.
