Abstract

PURPOSE: To prepare a low cariogenic sweetening agent, by the catalytic reduction of a sugar composition obtained by treating sucrose with fructosyl transferase, under specific conditions.
CONSTITUTION: A sugar liquid containing saccharides such as glucose, fructose, sucrose, oligosaccharide consisting of sucrose bonded with 1W4 molecules of fructose, etc. is prepared by treating sucrose with 5W200 unit, pref. 20W80 unit, based on 1g of sucrose, of fructosyl transferase. The sugar liquid thus obtained is subjected to the conventional enzyme deactivation, discoloration, and desalting, adjusted to pH7W9 with e.g. secondary sodium phosphate, and catalytically reduced with nickel catalyst, etc. to effect the selective conversion of glucose and a small amount of fructose existing in the sugar liquid to sorbitol and mannitol.
