Abstract
PURPOSE: To enable all amounts of formed saccharides to be solidified and to obtain a saccharide blend having usability which has not been found yet, by controlling the content of grape sugar and fruit sugar, which are prepared as by-products, by the change in temperature in converting sugar into palatinose by an enzyme.
CONSTITUTION: By using Serratia Plymuthica, Protaminobacter rubrum, etc. as a bacterium containing an enzyme for converting sugar into palatinose, this mold, an enzyme for extracting the mold or immobilized enzyme is reacted with sugar solution by stirring method, plug flow method, etc. When the reaction temperature is about 5W40°C, about 70W92wt% sugar is converted into palatinose, and about 2W20wt% based on total saccharides of the sum amount of grape sugar and fruit sugar is prepared as by-products. The higher the raction temperature, the more the amount of the by-products. All the amounts are solidified by removal of mold, purified, concentrated through vacuum evaporation, and solidified by solid state crushing, foam drying, etc.
