Abstract
PURPOSE: The titled substance is hydrolyzed using a tallow lipase B in the reaction mixture of a certain water content at a certain temperature, whereby high hydrolysis rate is achieved with less water content in the reaction mixture.
CONSTITUTION: Solid fat is enzymatically hydrolyzed using tallow lipase B, which is produced by P Pseudomonas fluorescence biotypeI(FERM-5495) wherein the water content in the reaction mixture is adjusted to 10W70% and the temperature is to 40W70°C, thus high rate of solid fat hydrolysis is achieved.
