Abstract

PURPOSE: To prepare a yeast extract by substituting a part of the yeast cells used as the raw material with brewers' yeast which is a by-product of beer brewing, thereby carrying out the autolysis in high efficiency without using an autolysis promoting agent.
CONSTITUTION: A slurry of living yeast cells containing 5W30g/dl of cells is prepared by culturing yeast belonging to Saccharomyces genus or Pichia genus in a nutrient medium. 10W80% of the yeast cells in the lurry are substituted with byproduced brewers' yeast (beer residue, etc.) and the slurry is subjected to autolysis at 5.0W6.5pH and 40W60°C. The liquefaction of the cells can be completed in 20W 50hr. The objective yeast extract can be obtained by removing insoluble residues from the slurry by centrifugal separation, etc.
