Abstract

PURPOSE: A mixture of a seasoning solution with a powder of dried bonito is combined with a powder of naturally occurring gum and conc. ethanol to produce the liquid seasoning having good taste of dried bonitor with high storability and convenience ready to be used.
CONSTITUTION: A seasoning solution made by adding salt, chemical flavorings and other additives to water or broth of dried bonito is combined with a powder of dried bonito of about 100 mesh particle size to form a dispersion. Separately, a naturally occurring gum powder such as xanthan gum is mixed with ethanol of higher than 95% concentration by use of a mixer to prepare a humectant. The resultant humectant is, directly or after dissolved in a small amount of a seasoning solution, added to the above seasoning solution containing a powder of dried bonito dispersed under stirring.
