Abstract
PURPOSE: To maintain the spice component in the titled spice powder for a long time, by adding and mixing a liquid polyhydric alcohol and/or a liquid saccharide in a specific proportion with the powdery spice, and granulating the resultant mixture.
CONSTITUTION: 100pts.wt. Powdery spice, e.g. a wasabi, mustard, onion or garlic, is mixed with 1W50pts.wt. (100% concentration), preferably 10W40pts.wt. liquid polyhydric alcohol and/or liquid saccharide to granulate the powdery spice. Mannitol or sorbitol may be used as the polyhydric alcohol. Isomerized liquid saccharide is used as the liquid saccharide. Thus, a granulated spice having a high retention ratio of the pungent component for a long time is obtained without hydrolysis or deterioration in quality as seen in the case of water, ethanol, etc. added thereto by the conventional method.
