Abstract
PURPOSE: To prepare butter, margarin and mayonnaise containing KONJAK (paste made from the starch of the devil's-tongue), having low calorific value and effective to prevent the absorption of cholesterol into the body, by mixing butter, etc. with KONJAK and/or KONJAK powder.
CONSTITUTION: Butter, margarin or mayonnaise is mixed with KONJAK cut into tiny pieces, or granular KONJAK having a diameter of ≤1mm, or hydrated KONJAK powder obtained by adding 3W100pts.wt. of water to 1pt. of KONJAK powder. The amount of the KONJAK is usually ≤50wt%, pref. 10W30wt% of the product.
