PURPOSE: Processed meat of marine animals is salted, desalted, smoked, frozen and made into paste to produce paste food products without anxiety about storability.
CONSTITUTION: Meat pieces of marine animals are uniformly coated with a small amount of salt, then exposed to water to effect desalting. Then, the pieces are drained until no water drops are observed on the surfaces and roasted to such an extent as the meat keeps yet flexibility, then frozen with a contact freezer. The pieces of frozen meat are crushed with a silent cutter or the like into a sol as rapidly as possible. The sol is mixed with a flavoring such as sodium glutamate or salt, solid fat such as well-cooled butter, natural glue, natural spices uniformly to give the product.
