Abstract
PURPOSE: To prepare soybean jam, by adding sugar, agar, etc. to strained soybean, and boiling down the mixture.
CONSTITUTION: Husked soybeans are boiled in water until softened sufficiently, and strained with a fine strainer. Separately, a sweetening liquid is prepared by adding sugar, starch syrup and sorbitol to an agar solution, and sufficiently boiling down the mixture. The strained soybean is added to the sweetening liquid, and kneaded over a slow fire with addition of rice flour.
