Abstract

PURPOSE: To prepare a dumpling skewered and fried without coat, having unique taste and flavor compared with the conventional skewered dumpling covered with liquid starch or with sugared soy sauce, by frying a skewered dumpling without coat.
CONSTITUTION: Wheat fluor, starch, water, minched meat, soy sauce, seasonings, sesame oil, etc. are mixed and kneaded together, and applied to the circumference of a skewered dumpling made from pure rice flour by conventional process. The coated dumpling is fried in oil at about 170°C for about 30min, without further coating.
