Abstract

PURPOSE: Salt, vinegar and carbon dioxide containing ammonium hydrogen carbonate are sprayed to a food product to prevent the food product from rotting as well as keeping the original color tone and freshness of the product as long as possible.
CONSTITUTION: An squeous solution containing sodium chloride, acetic acid and ammonium hydrogen carbonate is prepared and gasified by heating. Then, the gas is mixed with carbon dioxide and sprayed to a food product. The volume ratio of carbon dioxide to the ternary mixture preferably ranges from 7/3 to 5/5. The temperature of the gas is 13W16°C and the pressure is 0.15W0.25kg/cm2 on spraying. The time is effectively 30W90sec.
