Abstract
PURPOSE: To improve the taste, to increase the mineral-content, and to reinforce the salty taste of foods, drinks, seasonings, and feeds, by adding a composition composed mainly of bittern to the foods, etc.
CONSTITUTION: Bittern is added with a calcium salt which is not precipitated with the sulfate ions in the bittern, e.g. calcium lactate, calcium gluconate, calcium glycero-phosphate, calcium pantothenate, etc., to compensate the calcium lost in the bittern preparation process. The mixture is used as an agent for improving the taste, increasing the mineral content, and reinforcing the salty taste of foods, drinks, seasonings, and feeds.
