Abstract

PURPOSE: To obtain sugar-coated nuts having hardly releasable sugar coating layer and excellent preservability, by treating the nuts with a solution containing citric acid group, and coating the treated nuts with sugar.
CONSTITUTION: Nuts such as almond, hazelnut, peanut, etc. are immersed in a solution containing citric acid groups, e.g. a 0.1W5% solution of citric acid and/or citric acid salt, and preferably boiled in the solution. If necessary, the citric acid or citric acid salt attached to the nuts is neutralized and washed off, and the nuts is coated with sugar by conventional method, after or without drying.
