Abstract

PURPOSE: Fruit flesh of Japanese plum is admixed to sweet jelly of beans directly to produce a product that shows well balanced taste between plum and bean jelly, being an ideal food for health.
CONSTITUTION: Pieces of fruit flesh of Japanese plum are placed in a casting mold for making sweet bean jelly at an appropriate interval. In the meantime, agar is dissolved in water by boiling and sweet bean jam, sugar, malt syrup are added to the solution. Further they are concentrated, then casted into the mold and cooled.
