Abstract

PURPOSE:To prepare a novel processed food, by attaching a mixed flavoring to dried SHIITAKE (mushroom) and seasoning it with the mixed flavoring, roasting it mildly. CONSTITUTION:Dried SHIITAKE is soaked in an edible oil, and defatted by a centrifugal dehydrator. It is then dipped in water, washed, and dehydrated by a centrifugal separator. A mixed seasoning of salt, sugar, chemical flavoring, and pepper is attached to the surface of the wet SHIITAKE, which is allowed to stand and seasoned. The SHIITAKE is then put in a drum of the rotary type roaster 2 and roasted at 80-120 deg.C for about 2hr while rotating the drum, to give a product.
