Abstract

PURPOSE: Lecithin is added to a gluten of a specific water content to effect emulsification and the emulsion is dried into a powder to give a gluten of high dispersibility in water.
CONSTITUTION: A gluten of 50W80% water content is prepared and combined with 0.5W10% lecithin based on the weight of the dried gluten, then they are heated so that the activity of gluten is not lost. When necessary, an emulsifier such as a sucrose ester of fatty acid is added by 5W40% on the dry basis of the gluten. Then, the emulsion is freeze-dried into a powder.
