Abstract

PURPOSE: To prepare L-glutamic acid, in high yield, by culturing microorganism capable of producing L-glutamic acid in a medium containing, as a main carbon source, an inverted sugar obtained by inverting sucrose in blackstrap molasses of sweet potato with invertase.
CONSTITUTION: Sucrose in the blackstrap molasses of sweet potato is invertd with invertase to hydrolyze 60W100% of the sucrose. The inverted sugar mixture thus obtained is used as a main carbon source of a culturing medium without separating the inverted sugar. A microorganism capable of producing L-glutamic acid, e.g. Brevibacterium lactofermentum ATCC 13869, Corynebacterium glutamicum ATCC 13032, etc. is cultured in the medium, and the accumulated L-glutamic acid is separated from the medium.
