Abstract

PURPOSE: A regeneration and circulation system of NAD consisting of NAD, a dehydrogenase requiring the NAD and an enzyme capable of oxidizing NADH, and to deodorise a protein by using the system.
CONSTITUTION: A regeneration and circulation system of NAD containing NAD, a dehydrogenase requiring the NAD, e.g. an aldehyde dehydrogenase and an enzyme capable of oxidizing NADH, e.g. an enzyme requiring oxygen or a substrate of an enzyme requiring the NAD produced by the NADH and an enzyme requiring a saccharide and a carboxylic acid other than the product as a substrate. A protein is deodorized by treating it with an aldehyde dehydrogenase and an alcohol dehydrogenase in the presence of a hydrogen acceptor, and the formed NADH is regenerated and reused with the regenerating and circulating system.
