Abstract

PURPOSE: To prepare a "fushi" (dried and smoked fish), by using bony parts (the head, bones etc.) of a bonito.
CONSTITUTION: Bony parts of a bonito are ground at a relatively low temperature by a meat mill, etc. and the resultant unseasoned ground meat is deaerated or seasoned and deaerated by a deaerating apparatus to remove the air contained therein. The ground meat before or after the deaeration is packed in a shape retaining container and hardened by boiling in boiling water, steaming or other methods. The hardened fish meat is then taken out of the container and dried to give a dried produce by the smoke drying or electric drying or both methods.
