Abstract

PURPOSE: A binder is sprayed on strands of kamaboko (boiled fish paste) at an insufficient amount to wet the whole surface of the strands, thus producing moderately unfastenable Kamaboko products like scallops or meat of crab leg.
CONSTITUTION: A kneaded Kamaboko material including ground fish meat is extended to sheets of about 1.5 mm thickness and boiled. They are cut into strands of 1 mm diameter. Before or after cutting, a binder is aprayed on the strands to such an extent that the binder is insufficient to wet the whole surface of the sheets or strands and the uneveness of wetting remains. The resulting strands are bundled, cut into a given length, then packed or not packed, finally steamed.
