Abstract
PURPOSE: To soften or make palatable fish or shellfish meat which is not palatable by its toughness or strong fishy smell, by applying slits to the meat, and optionally putting seasonings, etc., into the slits.
CONSTITUTION: Raw or boiled fish or shell fish meat is passed through the gap between a pair of parallel rollers 1 and 2 disposed with a proper distance. One or both of the rollers are furnished with a number of cutting edges 3 to apply one or both sides of the meat with a number of slits. If necessary, various food additives such as seasonings, agents for removing fishy smell, preservatives, etc. are put into the slit.
