Abstract

PURPOSE: To prepare a fish paste product of reduced salt containing substantially no common salt, by using a salt, e.g. potassium chloride or magnesium sulfate, other than common salt as a salt grinding agent.
CONSTITUTION: In preparing a marine paste product, e.g. boiled fish paste or chikuwa (a kind of fish paste), or fish meat ham or sausage, by the conventional method, one or more selected from the group consisting of potassium chloride, potassium carbonate, magnesium sulfate, ammonium sulfate, ammonium chloride, potassium hydrogentartrate and potassium salts of various phosphoric acids are used as a salt grinding agent to carry out the salt grinding step.
