Abstract

PURPOSE: The titled substance containing esters of a specific fatty acid as impurities is treated with a lipase in the presence of water to hydrolyze these esters through industrially advantageous processes.
CONSTITUTION: A crude sucrose fatty acid ester containing at least one of fatty acid esters of aliphatic lower monohydric alcohols, fatty acid esters of aliphatic lower dihydric alcohols, saccharides, soap, fatty acids, aliphatic lower monohydric alcohols is treated with a lipase in the presence of water. The sucrose fatty acid ester is obtained by reaction between sucrose and a fatty acid ester in the presence of a base catalyst. The treatment is effected using a lipase such as acylglycerol lipase with combination or no combination with a reducing agent such as sodium dithionite to remove impurities by hydrolysis and other decompositions.
