Abstract

PURPOSE: To hydrolyze and remove only an ester of a fatty acid which is an impurity selectively without losing a sugaralcoholic ester of the fatty acid substantially, by treating a crude sugaralcoholic ester of the fatty acid with an enzyme capable of hydrolyzing a lipid.
CONSTITUTION: A crude sugaralcoholic ester of a fatty acid, obtained by the alcoholysis of a sugaralcohol and an ester of a fatty acid in the presence of a basic catalyst, and containing the ester of the fatty acid as an impurity, e.g. sorbitol ester or mannitol ester of a fatty acid, is treated with an enzyme capable of hydrolyzing a lipid, e.g. glycerol lipase, in the presence of water and if necessary a reducing agent, e.g. sodium dithionite or vitamin C, to hydrolyze the ester of the fatty acid into the fatty acid and alcohol selectively. The resultant fatty acid and alcohol are then removed by the conventional method.
