Abstract

PURPOSE: Barley, the raw material, is roasted in a hot-air oven at low temperatures first and then at high temperatures to make barley water of high transparency and good taste.
CONSTITUTION: Barley, the raw material, is thrown into a hot-air roaster and heat treated under a condition not exceeding 160°C as the set temperature for longer than 5min, preferably in a range 100W130°C for about 10W20min, further preferably the barley is sprayed with water drops or steam so that the set temperature in the roaster is kept lower than 100°C and the dew point in the roaster is kept to higher than 40°C for at least 1min. Then, the set temperature is raised up to 180W 280°C to effect the high-temperature roasting.
