Abstract

PURPOSE: To reduce the bitterness and dust, and to prepare green tea of strong taste without degrading the color, flavor, and taste of tea, by subjecting raw tea leave sprouts to heating in drum, and, if necessary steaming, and rough and fine rolling.
CONSTITUTION: Raw sprouts of tea leaves are continuously passed through rotating metallic drum at an internal temperature of 120W600°C for a suitable time of 60sec or longer depending on the hardness and water content of the sprouts, and pure water is added to the drum to adjust the moisture content of the sprouts.
