Abstract

PURPOSE:To prepare a spherical coagulated matter having salt resistance like fish eggs readily and securely, by dropping a gel into a salt of polyvalent metal having an atomic weight 50-80 to form spherical coagulated matter, followed by treating it in heated salt. CONSTITUTION:A gel comprising not less than 1wt% gel-forming substance, e.g., alginic acid, pectin, carrageenan, etc., and, if necessary, seasoning, spices, and other additives, are dropped into a bath of a salt of a metal having an atomic weight 50-80, e.g., copper acetate, or a mixed bath of calcium with a low concentration and a salt of a metal having a molecular weight 50-80, to give a spherical coagulated matter which is heated in 10-20wt% aqueous solution of salt and an acetic acid solution at about 70 deg.C, and, if necessary, it is soaked in a dilute calcium solution.
