Abstract

PURPOSE: To mass-produce seasoned boiled eggs with eggshells without causing cranking, by immersing preheated and boiled eggs at a specific temperature in an aqueous solution containing a given seasoning contained in a tank under pressure.
CONSTITUTION: Washed eggs are preheated in a preheating cooker 1 at 50W60°C, and boiled in a boiling cooker 2 at a high temperature of 85W90°C. The boiled high-temperature eggs are then immersed in an aqueous solution containing a given seasoning dissolved therein contained in seasoning tanks 3 and 4 at ordinary temperature for about 6hr under pressure, and the seasoned eggs are washed and dried to give seasoned boiled eggs with eggshells. In pouring the egges into the preheating cooker 1, boiling cooker 2 and seasoning tank 3 and 4, a cage 13 having a mesh is used, and several tens of eggs 15 are placed on each stage via multilayer partition lids 14a and 14b. The cage 13 is transported and introduced thereinto conveniently.
